My research focus is on improving indigenous African cereals and legumes based foods such as sorghum,millet,cowpea,bambara etc. through the application of techniques such as extrusion,enzymatic hydrolysis,heat moisture treatment (HMT) .All these techniques help to improve the functionalities of food products from the crops mentioned above.
